Olive Bruchetta |

Loaf of your favorite Italian bread (I use French, go figure) |

2 - 16 oz can of large chopped black olives |
|
1 lb of mozzarella cheese |
|
4 TBS olive oil |
|
1 large chopped Vidalia onions |
|
TBS of oregano |
|

| Slice the bread in ½ inch pieces, then brush with Olive Oil and bake in a 400degree oven until it browns. Be sure to watch this step closely, I usually burn the first batch. In a large bowl mix the olives, onions, oregano, oil and cheese. Then spoon mixture over toasted bread, top with more cheese and bake on 350 degrees until the cheese |
