| 1 lb chicken breast- boneless thin sliced |
| 1/4 lb prosciutto |
| 1/4 lb provolone cheese |
| 2 cup spinach |
| Flour |
| Salt & Pepper |
| Butter |
| 1/4 cup white wine |
| Pound chicken breasts, |
| Mix flower salt & pepper- lightly bread cutlets and brown in sauté pan with butter |
| Place chicken in baking dish- place 2 tbs of spinach, 1 piece of prosciutto, and 1 piece of provolone on each cutlet. |
| Pour wine into dish and bake for 15 minutes at 375F. |
| Serve with Hunter Sauce | |

Butter or margarine Mushrooms, cut into strips Chopped green onions 1 teaspoon flour 1 glass [1 cup] dry white wine 1 tablespoon tomato paste Salt and pepper Thyme Bay leaf Meat juices A little butter Chopped parsley, to taste

Brown together mushrooms strips and chopped green onions into hot butter or margarine. Sprinkle with flour. Stir, pouring in dry white wine; stir in tomato paste. Sprinkle to taste with salt, pepper and thyme; add bay leaf. Stir in meat juices. Simmer for 5 minutes. Away from heat, stir in just a little butter, before sprinkling with chopped parsley.
