Gumbo

1 lb Italian Sausage (cut into 1 inch pieces) |

1 Lb Shrimp |
|
4 Cups diced cooked chicken |

1 Large Yellow Onion |
|
3 Lg Carrots |
|
3 Stalks Celery |
|
4 Cups chicken broth |
|
28oz. crushed tomatoes |
|
½ cup rice |
|
¼ cup cooking sherry |
|
1 bay leaf |
|
1 Tbs Salt |
|
1 Tsp Black Pepper |
|
1 Tsp Red Pepper |
|
1 Tbs honey |
|
2 TBS Olive Oil |
|
3 cloves chopped garlic |

In large soup pot brown sausage, olive oil, and garlic. Once sausage is cooked, approx 5 minutes, added onions, carrots and celery all diced roughly. Allow vegetables to sweat some of their juices, approx 5 minutes. Then add tomatoes, chicken broth, sherry, honey and spices and bring to a boil. Reduce to a simmer and add shrimp, chicken, and uncooked rice. Ready to serve in 30 minutes, yet tastes even better after a few hours. |
